Ding Tai Fung
skillful shanghainese cuisine
- Raffles City Basement

Awarded by New York Times as one of the top 10 restaurants in the world, its standard is supposed to be top-notch. Indeed, even with the many outlets around, the food you get is of consistent quality. The open-concept kitchen allows you to watch as the large group of chef makes the handmade la-mian and dumplings served; and they don't seem to be very much pressured even when being observed. Through this, customers can witness that the pieces of dumpling dough are being carefully made and weighed.

Roasted Peanuts ($1.60)

Just an appetiser we ordered, but it is special with the seaweed strips.

Xiao Long Bao ($9)

Basically their most popular must-try dish here. Each of this is meticulously folded 18 times to fully seal it up.

Biting in, you get a small clump of marinated minced meat with plenty of tasty meat juice flowing out. Best enjoyed with ginger strips and vinegar.

Pork & Shrimp Dumplings ($6.50)

Less juice than the Xiao Long Baos, but still the same meat used, with an extra fresh shrimp lined along the side. This is something i never fail to order whenever i dine here.

Pork & Vegetable Dumplings ($5.80)

This is a very dry version of their dumplings, with little meat mixed with a larger proportion of minced spinach.

No juice, no crunch and lacking in taste. Rather disappointing actually.

Egg Fried Rice with Shrimps ($9.50)

It is really difficult to fry rice to this standard. The soft pearl-rice grains are nicely separated with very minimal grease. Lightly tasting of the fragrant fried egg, plus a couple of very fresh shrimps.

Egg Fried Rice with Pork Chop ($9)

The same wonderful fried rice base minus the shrimps but topped with a piece of pork chop instead. Well marinated and fried, the porkchop was tender, lean and not clogged with oil.

Stir-fried Spinach with Garlic ($8)

A pretty average dish, and was too expensive.

Overall: I prefer this to other restaurants like Crystal Jade's La Mian Xiao Long Bao. Just felt that the food here are more resonably priced and better for my liking.
